Chia Seed Pudding
This is a terrific grain free option for your morning "oats". Chia seeds are high in fiber, protein, essential fatty acids, vitamins and minerals. When soaked, chia seeds form a mucilaginous fiber which can be beneficial, acting as a prebiotic to your microbiome.

  • 1/2 cup coconut flakes good to add as a thickener if the coconut milk is low-fat

  • 1 quart ball jar with lid The quart sized ball jar works great to blend and store all the ingredients within. If you do not have this on hand, a bowl or other container will do.
Serving option
  • 1-2 tablespoons wolfberries rehydrate in hot water for 5-10 minutes

  1. Place all ingredients into the quart sized ball jar.
  2. Cover and place in fridge for at least 2 hours.
  3. Serve with wolfberries or other fruit as you would enjoy your morning oats.
