  1. Preheat oven to 400 degrees F. Note: I melt my butter in the oven during this time.
  2. Rehydrate wolfberries in hot water for 5 to 10 minutes. Note: save the water when you strain the berries as it makes a delicious tea.
  3. Blend together eggs, butter, coconut milk, honey, salt and vanilla.
  4. Combine flour and baking soda, sift into the batter and mix well until there are not lumps.
  5. Fold in wolfberries and nuts.
  6. Pour batter into greased muffin cups.
  7. Bake at 400 degrees F for 15 minutes.
  8. Cool, remove and enjoy!
